Chitin is a polysaccharide, being the second most abundant polymer on earth following cellulose. It is found in the outer skeletons of crustacean and insects, as well as the internal structure of Invertebrates. Chitin is mainly made from shells of shrimps and crabs, through the process of decalcification, deproteinisation and decoloration etc.
